Fresh borage
The fresh herb has a cucumber-like fragrance and taste that can be muddled and infused in cold water or tonic water for a refreshing and restorative summer drink. When infused in hot water the flavor deepens to a slightly bitter taste that reminds me of summer squash. The hot tea brings out more of the relaxing, nerving properties of borage. The leaves, flowers and stems can be used fresh, or freshly dried for best results.

Herbal Tea
:Use a tablespoon of cut and bruised fresh leaves or a teaspoon of dried fgor each cup of water. 2 to 3 medium fresh leaves are used in cold drinks.
